Slow Cooker Beef Stew

Ingredients


2 lbs stew beef @wildharmonyfarm

48 oz baby potatoes

10 carrots, chopped

2 celery stalks/bunches, chopped

2 onions, chopped

2 TBS olive oil

2 cups red wine

3 quarts beef stock

2 tsp salt

20 grinds black pepper

1 tsp thyme

4 TBS corn starch

4 tsp water

Parmesan cheese for topping


Directions


Add beef to hot skillet with olive oil, salt and pepper. Cook until nice and browned on all sides. Add wine and cook for 5 minutes. Add beef and wine to crockpot with potatoes, carrots, celery, onions, thyme and beef broth. Cook on high for 4-5 hours or until beef is fork tender. Mix corn starch with water in a small bowl. Add this to stew and stir-stew will thicken a bit. Enjoy hot! My family likes to top with parmesan cheese.
