How to get 8 meals from one whole chicken and one dozen eggs!
As a farmer, a small business owner, a mama to a toddler, I feel like my brain is just mush by the end of the day! (Let's be honest... it happens before the end of the day)
Lately, I have been learning about brain function and how much energy it takes to make decisions throughout the day, so I have been decreasing the number of decisions I need to make. For example, if I decide that every week we will have Taco Tuesday in my house, that’s one less decision to take up space in my mind. (Did you know that big-time CEO's go as far as wearing the same type of shirt every day... think Zuckerberg, Obama & Jobs... to name a few)
I know it’s not that fancy, but every Sunday I make a list of meals for the week on a piece of paper that I put on the fridge, and oh my word, you guys, meal planning has revolutionized my household!
If you buy one dozen eggs and one Wild Harmony whole chicken, here is a sample three-day meal plan for you. Depending on the size of your household, you might want a larger chicken and two dozen eggs.
Saturday
~ Roast a chicken or cook it in the instant pot
~ Part the chicken out
~ Save the chicken carcass for chicken stock
Sunday
~ Make chicken stock
Monday
Breakfast: Veggie Frittata (6 eggs) (I use whatever is leftover from the week for veggies)
Lunch: Chicken salad
Dinner: Fried rice - cook the rice in the chicken stock and then scramble in 2 eggs
Taco Tuesday
Breakfast: Scrambled eggs (4 eggs) with leafy greens
Lunch: Chicken tacos
Dinner: Chicken caesar salad - there is nothing like homemade caesar salad dressing!!
Wednesday
Breakfast: Oatmeal with summer berries
Lunch: Leftover frittata
Dinner: Chicken enchiladas
