6 eggs from Wild Harmony
1/2 package of Wild Harmony hot italian sausage
1/2 cup green garlic, chopped, from Little River Farm
Arugula from Little River Farm
Feta or goat cheese (optional)
Preheat oven to 350 F
Saute sausage and green garlic in oil in oven proof skillet. (cast iron is preferred)
When sausage is mostly cooked, cut into smaller chunks.
In separate bowl scramble eggs. Season with salt and pepper
Pour eggs into skillet over sausage.
(Sprinkle cheese over mixture.)
Bake 15 minutes or until eggs are no longer runny.
Sprinkle arugula over top just before serving.
